Lemon Basil Hummus

This flavorful hummus is so addictive you’ll forget how good it is for you! Chickpeas fill you up since they are rich in protein and fiber with just half a cup containing 8 grams of protein and 6 grams of fiber. They are also high in bone strengthening manganese and packed with folate, which is not only necessary for cell production but also has been linked to improved mood. While chickpeas contain iron, iron from plants is more easily absorbed when eaten with vitamin C, which we add in with lemon juice. Lemons also contain the antioxidant isoprenoid limonene, which has been shown to lower cholesterol levels, helping to prevent cardiovascular disease. Don't forget the basil! This simple herb contains a high dose of bone-boosting vitamin K as well as anthocyanins - phytochemicals that fight inflammation.

Directions: 

  • Wash basil, remove stems and pat dry. Remove skin from garlic.

  • Place basil and garlic in food processor. Add 1 tablespoon olive oil and lemon juice. Rinse chickpeas and add to food processor. Blend until smooth. Add salt and pepper to taste and blend again. 

  • Enjoy with with baked chips or carrot and cucumber sticks!

  • 1 can 15.5 ounce can chickpeas
  • 1 fistful of basil
  • 1 large lemon
  • 1 tablespoon olive oil
  • 1 clove garlic (optional)
  • Dash of salt and pepper
