If you’re looking for a healthy snack, or your kid loves hummus as much as mine does (she asks for it at every meal!), then this recipe is for you. Chickpeas are filled with protein and fiber and when roasted up they make for an easy to grab on-the-go snack.
Preheat your oven to 400 F.
Line a baking sheet with parchment paper and spread chickpeas in a single layer on a baking sheet. Bake for 30 minutes, and occasionally shake pan.
Remove chickpeas from the oven and carefully place them in a bowl filled with olive oil, lemon juice, garlic, salt, and pepper. Mix well with a spoon. Spread chickpeas back onto baking sheet and bake for another 10 to 15 minutes, or till they are golden and crispy.
Eat warm or store in an airtight container in the fridge. Enjoy!
2 15 ounce can chickpeas, drained and rinsed
2 tablespoon olive oil
1 lemon, juiced
1 - 2 teaspoon garlic powder or 3 large garlic cloves, minced
¼ teaspoon fresh cracked pepper
½ teaspoon sea salt
